My kitchen has a 1950's gas stove that I love, not because of its toxic <br />emissions or its funky cooking ability but because in my eye, it fits the 1950's house that we <br />live in. However, when we move or renovate I will absolutely switch to induction cooking - <br />for all of its benefits including not heating the house in the summer; the exacting control <br />induction brings and the associated environmental and safety benefits. <br />We have a climate crisis as seen with all the fires that are burning in California, Oregon, <br />Washington and even in Colorado where my parents live.
