The Mayor read the following letter from the Health Department:
It is extremely difficult to associate why there is any connection between health, welfare and
safety in the sale hdurs of meat, as the only factors governing wholesomeness and safety of
meat are proper controls during slaughtering, storage, transportation, handling and display of
the fresh meat product.
As long as proper sanitation controls, including refrigeration, are provided, during the above
mentioned stages, the meat must be considered just as safe for human consumption whether it was
purchased during any control hours, such as 8:00 a.m. to 6:00 p.m., or whether or not the meat
was actually, sold on holidays, Sundays or at midnight.
If proper inspection by qualified meat inspectors is carried out at the slaughtering house, and
proper consideration is given to the storage, transportation, handling and display of the meat
products to assure compliance with present day accepted standards of refrigeration and sanitation,
then there should be no danger std the health and safety of the public, should the fresh meat be
sold at any hour of the day.
