<br />6.1C <br />Page 7 <br /> <br />ATTACHMENT 1 <br /> <br />trained in the avoidance of cross contamination as required by law. Licensee shall <br />maintain and prepare food in a manner and at appropriate temperatures that meet or <br />exceed County Health or other relevant food preparation and storage guidelines. <br /> <br />6.8 Refriaeration. Licensee shall monitor refrigerators and freezers and periodically, <br />no less than once per week, measure the temperature within each refrigerator or freezer <br />to determine if appropriate temperatures are being maintained. licensee shall adjust all <br />refrigerators and freezers to maintain adequate temperature. In the event that any <br />refrigerator or freezer cannot maintain an adequate temperature level the City of <br />Redwood City shall be informed immediately, and the unit shall be taken out of service. <br /> <br />6.9 ManaQement of Cafe. Licensee shall manage the cafe and all operations therein. <br /> <br />6.10 Selection of Food. Licensee shall provide a broad selection of food <br />commensurate with demand and food storage capabilities. <br /> <br />6.11 Alcohol. Licensee is not to sell, dispense or allow alcohol to be consumed on the <br />Premises. <br /> <br />6.12 Equipment Maintenance. Licensee shall clean all equipment daily and perform <br />routine maintenance upon all equipment. Licensee shall inform City of Redwood City <br />within 24-hours of discovering any broken or malfunctioning equipment. <br /> <br />6.13 Refuse. Licensee is solely responsible for removing its waste and recycling <br />generated as a result of its business operations. The waste and recycling area shall be <br />designated by the Licensor. <br /> <br />6.14 Uniforms/Clothina. Licensee and all employees shall wear clean and safe <br />clothing at all times. <br /> <br />6.15 Service to All. Every cafe patron shall be served equally and will not be <br />discriminated against on the basis of any protected group under any applicable federal, <br />state, and local law. <br /> <br />6.17 Hours of Operation. Licensee shall operate the business no less than the <br />operating hours of the library. The Licensee's business may close for all City holidays. <br /> <br />6.18 Annual Vacation. The Cafe may be closed for no more than five days per year to <br />allow for vacation. The City of Redwood City shall be provided 15 days notice of any <br />proposed closure. The five days allotted may be taken together or individually. <br /> <br />6.19 Custodial Services. Licensee will provide basic custodial services for the eating <br />portion of the Premises. Licensee shall be responsible for all clean-up in the preparation <br />and serving portions of the Premises. <br /> <br />7. USE OF PREMISES <br />7.1 Unless otherwise agreed to by Licensor in writing, the Premises may be used <br />only by Licensee and licensee's agents, customers, and contractors for the <br />purposes stated herein. <br /> <br />Attyl Agr/2008.049 <br />090208 <br /> <br />5 <br />
