Lessee sha[I hire an adequate number of persons in order to <br /> provide food services in a prompt and timely manner under fihis Lease. <br /> 8.3 Pavment of Lessee's Empiovees. Lessee shafl pay all persons h�red as required <br /> by iaw, includ�ng but not limited to, income tax withhnidir�g and sociai secur�ty <br /> payments. No employee of Lessee shall be deemed to be an employee of <br /> �essor. <br /> 8.4 Qualify of Food. All food and presentation shal! be frst class with the minimum <br /> standard being high quality food and service comparab(e to or exceeding those <br /> of other similar businesses. The highest standard of cleanliness and sanitation <br /> on �he prernises and in the course of food preparafion shall be maintained <br /> withQUt exeepfion. <br /> 8.5 1Vlanaqement of the Concession Space. Lessee shall manage Hidden Dragon <br /> Tea House and a!f operations therein. <br /> 8.6 Hours of O�era#ion. Lessee shall be apen for business.and conduct full scale <br /> operation hereof no fater than 11:00 am and close no earlier than 7 pm, <br /> e�eryday. On recognized Federal ho[idays only, Lessee may close or be open <br /> for a reduced number of hours, and shall post a sign to show the change �n hours <br /> in advance of fhe holiday. <br /> 8.7 Material Wasfe Reducfian. Lessee sha�l reduce, reuse, and recycle materials in <br /> order fo reduce th� amount of waste senfi to landfilfs. Lessee shall participate in <br /> the Counf}r of San Mateo's composting collection program as feasibly possible. <br /> Biodegradable products are encouraged. Styrofoam "fo go" containers are not <br /> p�rmitted. <br /> 8.8 Alcohol. Lessor will allow for tne sale of only beer and wine if Lessee obtains the <br /> required permits from the California Department of Alcoholic Beverage Control. <br /> Lessee sf�all serve beer and wine in a container that identifies the beverage as <br /> �ur�hased frorn th� Ni�der L�ragon 7ea House. The servEng ef beer and �vine :n <br /> botfiles, boxes, and cans are no#allowed. <br /> 8.9 .Eauipment Main#enance. Lessee shall clean al# equipmen# daify and pe�fiorm <br /> rou�ine maintenance upon all equipment. <br /> 8,10 Custodiaf Services. Lessee wiff provide a!! custodial services and day-to-day <br /> c�ean-up for the Lease Area. <br /> 9 �1SE AMD�"1M� OF USE <br /> 9.1 Unless atherwise agree� ta by Lessor in wri#ing, the Premises may be used only <br /> by Lessee and �essee's agents, customers, and contractors for the purposes <br /> stated herein. <br /> 9.2 Lessee agrees not to use or perrnit use of the Premises for any un[awfui <br /> purpose, and not to commi# or permit any waste or nuisance in or about the <br /> Prernis�s.
